When I try to export using the "export to excel" icon, I get
Name
Phone no
email address
City
State
Department
Division

Is there a way I can customize excatly what fields I want to export (postal code, Contact #1, email address for contact #1, etc)

Yes order the columns with the info you want and then export to Excel.
