Can you add opportunity UDF merge fields to an automated email campaign? use quite often merge fields in my HTML coding with great success. Would like to target our WON sales with personalised emails.

Not really, no. You can add Opportunity merge fields to an Email campaign template, but they won't merge because an automated campaign is not directly related to any particular Opportunity.

The messages can be personalized with address book UDFs, but not with Opportunity UDFs.
