Changing Default Fonts in Email

Hello to one and all!
Happy New Year

I am having a problem where my email client in Max 9 is making the font for new emails arial 12.
I don't mind the arial, but would like to have a 10pt size rather then 12pt. I can change the default in Outlook 2003, but that is only good if I create the new email directly out of Outlook, when I do it in Max 9 it defaults to these other settings.

Can anyone tell me how to change this?
