The great thing about Max Exchange is that it works at the field level and journals all the changes so that they can be re-applied in as close to the way the changes occurred in real time as possible.
If two users change two different fields you should see both changes. If they change different fields the time they changed them is important. Max Exchange tries to implement changes as if they happened in real time so you should see the last change remaining on the database. Its important that the PC clocks are set correctly and if users are in different time zones, that this is correctly configured in the Distribution manager so that Max Exchange can make the allowance when working out which changed happened first/last.
