A client has a RAID server - is it possible to use Maximizer on this type of server??

You mean a server with a RAID array? If so, then sure.

I'm not too sure actually what RAID means, apart from that it reads different disks at the same time? Which made me concern about the storage of the Max data.

RAID == Redundant Array of Independent Disks
A collection of several physical disks that operate like a single disk drive. The "Redundant" part refers to the fact that most RAID arrays provide fault-tolerance: one physical disk can fail and the RAID array will continue to function.
